TASTING NOTES
The colour is a deep gold with copper highlights, animated by fine, persistent bubbles. On the nose, red fruits (raspberry, morello cherry) mingle with toasted and brioche notes, underpinned by a subtle chalky minerality. On the palate, the attack is lively and precise, the mid-palate generous and full-bodied, leading to a long finish with accents of flint and grilled bread.
The composition

Terroirs
The lieu-dit Les Bas Russelets, on the clay-limestone slopes of Damery in the Vallée de la Marne, is home to Pinot Noir vines planted in 1981 by massal selection. This terroir lends the wine its characteristic mineral tension and a remarkably pure expression of red fruit.
About this house
Established in Damery for seven generations, Champagne Maurice Choppin is today led by Benjamin Choppin, who carries forward with conviction an artisanal style rooted in respect for the living vine. The 6.5-hectare estate, certified Haute Valeur Environnementale (HVE) since 2018, is farmed according to organic viticultural principles: ploughed soils, zero chemical inputs, and full effluent recycling.
Benjamin's philosophy rests on total non-intervention: spontaneous fermentation with indigenous yeasts, spontaneous malolactic conversion, and ageing on lees in 225-litre oak barrels, with neither filtration nor fining. Each cuvée expresses the singular identity of its plot, yielding Champagnes of rare purity and honesty.
The perfect pairing
Aperitif
The mineral tension and fine bubbles of this Blanc de Noirs Extra Brut pair beautifully with the golden warmth of cheese gougères.
Starter
The wine's citrus notes and lively acidity respond elegantly to the smoky, herbaceous flavours of gravlax.
Main course
The fruit-driven structure and restrained power of this Damery Pinot Noir marry naturally with the delicate gaminess of roast guinea fowl.
