THE CUVÉES OF MAISON PIPER-HEIDSIECK
A pale gold robe with faintly gilded highlights, threaded through with a fine, persistent effervescence. On the nose, fresh citrus and floral notes give way to hints of light brioche and ripe white fruit. The palate opens with a clean, precise attack; the tension of Chardonnay enters into dialogue with the generosity of Pinot Noir, and the mineral, mouth-watering finish lingers on candied citrus.

A blend of more than 50 Champenois crus, including around 27% reserve wines that ensure the continuity of the house style from year to year. The dominance of Pinot Noir anchors this champagne firmly in the great terroirs of the Montagne de Reims and the Vallée de la Marne.
Founded in 1785 in Reims by Florens-Louis Heidsieck, Piper-Heidsieck is one of Champagne's most illustrious houses, present in over 100 countries. Linked from its very origins to the history of France — Marie-Antoinette was among its earliest admirers — it has embodied French elegance for more than two centuries.
Since the arrival of chef de caves Émilien Boutillat in 2019, the house has taken a resolute turn towards greater precision and verticality, reducing dosage levels and celebrating the natural freshness of the Champenois grape varieties. L'Essentiel Extra Brut is the clearest expression of this new chapter.
The lively bubble and extra brut tension are a perfect match for Comté gougères — a classic pairing, executed flawlessly.
The champagne's citrus freshness elevates the delicacy of sea bass, with pepper echoing the vibrancy of the extra brut.
The subtle bitterness of green asparagus and the minerality of risotto resonate beautifully with the tension of this extra brut.

Open for our New Year’s Eve dinner. Hints of brioche and minerality. I’d recommend it without hesitation.
