TASTING NOTES
A deep golden colour, crossed by a long chain of fine bubbles. Butter and toasted brioche dominate. The palate is full and structured, supported by a pronounced minerality, and the finish remains clean and lingering. With a dosage of 2 g/L, nothing masks the wine. Serve it chilled, preferably with a meal.
The composition

Terroirs
Half chardonnay, half meunier, from Pierry, the house's home village. This is the first cuvée that Bonvalet has vinified in oak barrels, Meursault barrels purchased in 2023. The wine undergoes malolactic fermentation, ages in barrels, then receives a dosage of 2 g/L, that of an Extra-Brut.
About this house
No winegrower in the family, no vineyard inherited: Guillaume Bonvalet founded his house in 2012, making his first wines in cellars lent to him by a winegrower. The first bottles were released in 2014. His wife Pauline joined him in 2017, and the couple became a négociant-manipulant by having their own building built in Pierry, near Épernay. Their grapes come from vineyards farmed under HVE and Viticulture Durable en Champagne certification.
With Amas Stellaire, the house seeks the balance between apparent chaos and gravitational order, between the individual and the collective. It is the cuvée through which it asserts its identity.
The perfect pairing
Aperitif
Butter and toasted brioche meet shortbread, and the 2 g/L dosage gives full expression to the saltiness of parmesan.
Starter
Its full palate and pronounced minerality embrace the flesh of the scallop, which its buttery notes echo.
Main course
Its structured palate holds its own at the table against poultry, and its toasted notes accompany truffle.
