TASTING NOTES
A deep golden colour, enhanced by a long string of fine bubbles. The generous nose opens on pear and elderflower, with notes of pastry. The palate entry is rich and fruity, the mouthfeel lively and supple, carried by lovely freshness and subtle mineral aromas. Serve it chilled: it opens the aperitif and carries on through the meal.
The composition

Terroirs
The three grape varieties of Champagne in a single bottle: 45% Meunier, 30% Chardonnay and 25% Pinot Noir. The house selects its grapes plot by plot, from vineyards farmed under HVE and Viticulture Durable en Champagne certification, and vinifies them in Pierry. The wine undergoes malolactic fermentation, matures for 4 years in the cellar, then receives a dosage of 7 g/L.
About this house
No winegrower in the family, no inherited vines: Guillaume Bonvalet founded his house in 2012, crafting his first wines in cellars lent to him by a winegrower. The first bottles were released in 2014. His wife Pauline joined him in 2017, and the couple became négociant-manipulant by building their own premises in Pierry, near Épernay. Their grapes come from vineyards farmed under HVE and Viticulture Durable en Champagne certification.
The house's emblematic cuvée, Épopée represents its beginning: released in 2014 in approximately 3,000 bottles, it symbolises for Bonvalet 'Action in the service of ambition'.
The perfect pairing
Aperitif
The pairing recommended by the Gastronomico guide: a light, soft gougère, whose cheese echoes the freshness and pear notes of the cuvée.
Starter
Another suggestion from Gastronomico: the citrus and herbs of the gravlax extend the elderflower notes, and the bubbles lighten the richness of the salmon.
Main course
Its rich palate entry and 4 years of maturation pair with poultry without overpowering it, and its suppleness lets it carry on through the meal.
