TASTING NOTES
Pale gold in the glass with green highlights, threaded with fine, persistent bubbles. The nose opens on white peach, candied lemon and a hint of brioche, with the characteristic floral note of Meunier grown on clay-limestone soils. The palate is lively and precise, carried by a saline freshness and a delicately mineral finish that speaks clearly of the Vallée de la Marne terroir.
The composition

Terroirs
Sourced from the clay-limestone soils of Baslieux-sous-Châtillon, at the heart of the Vallée de la Marne, this champagne draws on vines around forty years of age. The blend incorporates 40% reserve wines from the past five vintages, lending depth and consistency to every disgorgement.
About this house
Established in Baslieux-sous-Châtillon since 1956, Éric Taillet tends 5.75 hectares in the Vallée de la Marne, including certain plots planted as early as 1902. A self-declared specialist in Pinot Meunier — which accounts for 82% of the domaine's plantings — Éric Taillet offers a genuinely terroir-driven interpretation of this grape, far removed from the blending-component role to which it is so often reduced.
The house has long practised a respectful approach to viticulture: no herbicides, no chemical fertilisers, in a commitment to preserving living soils. This long-term philosophy, combined with old vines, gives its champagnes a depth and singular identity that stands out within artisan Champagne.
The perfect pairing

Its lightness and vivacity make it the ideal companion to freshly baked cheese gougères.
Starter
The citrus notes and saline freshness pair beautifully with herb-and-citrus-cured salmon gravlax.
Main course
The roundness of Meunier and the reserve wines harmonise with the gentle, vegetal sweetness of asparagus risotto.
