On the nose, a precise and airy expression of lemon, grapefruit and white flowers, nuanced with touches of exotic fruit (passion fruit, mango) and a distinctive chalky minerality. On the palate, the attack is fresh and taut, the texture silky and weightless, the finish long on notes of candied zest and flint.

Chardonnays sourced exclusively from Premier Cru and Grand Cru classified plots on the Côte des Blancs — Avize, Cramant, Grauves. A blend of several vintages and reserve wines, aged for a minimum of five years on lees to develop complexity and depth.
Founded in 2005 in Avize by three brothers — Guillaume, Richard and Rodolphe Frerejean — the house perpetuates a dual heritage: from their mother, a descendant of the Taittinger lineage, they inherited the Champenois savoir-faire and a deep attachment to the terroirs of the Côte des Blancs; from their father, born into a family of master ironworkers whose history stretches back to 1778, they drew their entrepreneurial boldness — their ancestors forged the famous Frerejean Frères cannons of the Napoleonic campaigns.
The house works exclusively with Premier Cru and Grand Cru classified plots, using minimal sulphites and deliberately extended ageing on lees (5 to 12 years), with low dosages that allow the full purity of the terroir to express itself.
Its mineral vivacity and fine bubbles pair beautifully with the buttery, airy quality of cheese gougères.
The citrus notes and chalky minerality of the Champagne echo the zests of the gravlax and elevate its melting texture.
The tension of pure Chardonnay marries the creaminess of a risotto and the fresh, vegetal character of green asparagus.
