The palate reveals a creamy yet taut texture of great minerality, with a long finish evoking Pu-erh tea and briny sea salt.

A historic 0.54-hectare micro-plot in Cumières (Premier Cru, Vallée de la Marne), planted by massal selection in 1964–1965 on deep argilo-calcareous soils. Quite possibly one of the oldest clos in Champagne, mentioned as far back as the 18th century.
Champagne Hervé Jestin was founded by Hervé and Yann Jestin, who took over the Clos de Cumières in 2011 with the ambition of unlocking its full terroir expression. Biodynamic viticulture is practised with rigour — harvesting on fruit days, indigenous yeasts, and vinification in Allier forest oak barrels with no temperature control.
Each vintage rests in the cellar for many years before disgorgement, with 12 harvests maturing simultaneously. The 2012, their first vintage as proprietors, embodies this philosophy: zero dosage, pure terroir expression, and extended ageing of over nine years on the lees.
