Aromatic profile

The structure of this champagne

Four dimensions to capture its balance
Freshness
The predominance of Chardonnay and the natural acidity of the 2008 vintage impart a finely chiselled, persistent tension.
Roundness
Ten months' ageing in Burgundian oak barrels lends a silky texture that envelops without weighing down.
Power
The twin contribution of Pinot Noir from Bouzy (Grand Cru) and Cumières structures the blend with density and depth.
Length on the palate
A long, saline finish, marked by the chalky minerality of the Montagne de Reims and Vallée de la Marne terroirs.

TASTING NOTES

A golden robe with amber highlights, fine bubbles of rare persistence. The nose is complex and evolving: candied citrus, quince, lightly toasted brioche, gentle spices (turmeric, clove), and a smoky mineral edge. On the palate, the attack is lively and precise; the silky texture reveals a generous, full-bodied substance and an exceptionally long, saline finish.

Terroirs

A blend of three outstanding terroirs: Chardonnay from Trépail (1er Cru, Montagne de Reims) brings tension and chalky minerality; Pinot Noir from Bouzy (Grand Cru) provides structure and depth; that from Cumières (1er Cru, Vallée de la Marne) contributes fruitiness and elegance.

Jestin

About this house

Founded in 2006 in Épernay by Hervé Jestin, a world-renowned oenologist-consultant, Maison Jestin stands as one of Champagne's most distinctive addresses. A pioneer of biodynamics in the region, Hervé Jestin sources his grapes from certified organic partner growers — among them David Léclapart, Georges Laval and Benoît Lahaye — to craft exclusively vintage-dated cuvées.

The house philosophy rests on a resolutely minimalist approach: harvesting on fruit days according to the lunar calendar, fermentation with indigenous yeasts, ageing in oak barrels, and sulphiting kept to the barest minimum. Each bottle is a faithful expression of a single vintage and a single terroir, free from artifice or embellishment.

Food pairing

The perfect pairing

Between the champagne and its dish
Aperitif

Aperitif

Its chalky vivacity and fine bubbles make this an elegant aperitif Champagne, ideally served alongside Parmesan shortbreads for a classic, refined match.

Starter

Starter

The minerality and freshness of the Chardonnay from Trépail pair beautifully with the delicate, briny notes of a sea bass carpaccio.

Main course

Main course

The roundness gained in oak barrels and the power of the Pinot Noirs marry the rich umami depth of a morel risotto for an earthy, generous pairing.
