TASTING NOTES

The colour is a deep gold with amber highlights, threaded with fine bubbles of remarkable persistence. The nose is complex and evolved, revealing candied vine peach, dried apricot, buttery brioche and a hint of beeswax inherited from barrel ageing. On the palate, the attack is broad and vinous: ripe stone fruits, toasted hazelnuts and notes of warm bread meld into a dense, weighty texture, carrying through to a long, saline finish of flint-like precision.

About this house

Founded in 2006 in Épernay by Hervé Jestin — a pioneering figure in organic and biodynamic Champagne — this house is the culmination of three decades spent consulting for some of the greatest maisons, including Billecart-Salmon, before breaking free to express his own vision. Each cuvée is created through an ultra-short circuit, in direct collaboration with legendary growers who share the same natural convictions.

Every stage of production follows the lunar rhythms and cosmic calendar of biodynamics: harvesting exclusively on 'fruit days', fermentation and ageing in Allier oak barrels, bottling in July 2010 after the summer solstice, and disgorgement in November 2020 after more than ten years on lees. Production, certified Organic, is confidential and numbered — 6,652 bottles of absolute rarity.
