Aromatic profile

The structure of this champagne

Four dimensions to capture its balance
Freshness
Chardonnay alone and 3 g/l dosage: the tension at the entry of the palate is immediate.
Roundness
The tension quickly fades in favour of a softness of candied citrus, without heaviness.
Power
A wine of delicacy rather than power, playing on precision and clarity.
Length on the palate
A clean finish on pink grapefruit, refreshing, with no lingering sweetness.

Terroirs

Blanc de Blancs 100% Chardonnay based on a 2021 vintage, sourced from the estate's seven hectares between Vauchamps, in the south-west of the Marne, and Festigny, on the left bank of the Marne. Vinified in stainless steel tanks, malolactic fermentation with indigenous yeasts, aged on laths, dosage at 3 g/l.

Néret-Vély

About this house

Néret-Vély is a family house established in Vauchamps in 1945. Passed on in 1980 to Carole Néret's parents, it was taken over by her in 2019, following in the footsteps of her father Alain — the third generation at the helm of the estate.

Seven hectares of vines spread between Vauchamps, in the south-west of the Marne, and Festigny, on the left bank of the Marne, producing approximately 40,000 bottles per year. The property holds HVE certification and operates according to a sustainable viticulture approach: biodiversity, soil tillage, and occasionally the use of draught horses in the plots.

The wines are crafted in stainless steel tanks, with malolactic fermentation and the estate's own indigenous yeasts. Since 2023, the house's labels have been illustrated by Reims-based artist Kevin De Tunne (KTD Art), and the logo incorporates a drawing of the hillsides and the Marne.

The citrus notes of the gravlax echo those of the wine: the pairing is one of continuity, not contrast.

Main course

Main course

The butter of the sole finds in this lightly dosed blanc de blancs the tension it needs to remain light.
