The palate is creamy without heaviness, underpinned by a precise acidity that speaks of an elegant structure with accents of thyme, mandarin zest and stone fruit, leading to a finish of remarkable persistence.

Sourced exclusively from the Côte Glacière plot in Aÿ — a steeply sloping hillside with an ideal aspect, planted with fifty-year-old Pinot Noir vines that lend generosity and depth to this exceptional blanc de noirs. The two Hommage cuvées, vinified separately by Michel Davesne, are aged for seven years in the cellars before disgorgement.
Maison Deutz, founded in 1838 in Aÿ by William Deutz, has built its reputation on the excellence of the Pinot Noirs from this exceptional terroir. The house style — balance, precision, length — is the result of rigorous winemaking entrusted to cellar master Michel Davesne, who vinifies each plot separately to reveal its full singularity.
Committed to sustainable viticulture, Deutz produces cuvées of the highest order, of which the Hommage à William Deutz represents the pinnacle: a tribute to the founder through two single-plot vineyards in Aÿ, La Côte Glacière and Les Meurtrets, elevated to prestige cuvée status since 2010.
Its chalky minerality and exceptionally fine bead make this the ideal champagne to open a fine table.
The creamy texture and aromatic complexity of the champagne pair beautifully with the smoky, citrus-edged flavours of gravlax.
