TASTING NOTES
A golden robe with canary-yellow hues, crossed by a fine, vivid and delicate string of bubbles. On the nose, flowers and citrus fruits mingle with white and red fruits, then gingerbread and honey. The palate is round and supple, carried by a creamy effervescence; the whole remains elegant and remarkably long. Serve at 8-9°C, as an aperitif or with a meal: its power allows it to accompany the whole meal.
The composition

Terroirs
Four-fifths pinot noir to one-fifth chardonnay, from vines around 35 years old on the chalky soils of the Premier Cru of Avenay-Val-d'Or. Hand-harvested, the grapes are vinified slope by slope in enamelled steel tanks. The wine then undergoes a light cold filtration and matures for 30 to 36 months on lees in the cellar, before a dosage of 6 g/L. 12.5% vol.
About this house
A family estate founded in 1963 by Gaston Révolte, the house has worked the same land for three generations and ages its wines in the same cellars, in Avenay-Val-d'Or. Its 7 hectares of Premier Cru, planted with 90% pinot noir and 10% chardonnay, are ploughed with the help of draught horses. Its champagnes are served in starred restaurants and sold in Europe, Korea, Japan, Taiwan and India.
Richness and elegance: this is how the house presents this cuvée, the most faithful to its vineyard, since its blend closely follows the dominance of pinot noir on its slopes.
The perfect pairing
Aperitif
The house sees it as a cocktail-style aperitif: its body and creamy bubbles hold up against a variety of canapés.
Starter
The pairing recommended by the house: the wine's creamy texture matches the gratin, and its fruit matches the sweetness of the scallops.
Main course
Another tip from the house: the wine's roundness pairs with the creaminess of the risotto, and its elegance makes room for the truffle.
