The composition

Terroirs
A Blanc de Noirs from old vines: 100% pinot noir from vines around 45 years old, on the chalky soils of the Premier Cru of Avenay-Val-d'Or. Hand-harvested, vinified plot by plot in enamelled steel tanks, with light cold filtration. Bottled in 2011, the wine matured 100 to 140 months on lees in the cellar, that is eight to nearly twelve years, then received a dosage of 4 g/L. Production of 1,800 numbered bottles. 12.5% vol.
About this house
A family estate founded in 1963 by Gaston Révolte, the house has worked the same land and aged its wines in the same cellars for three generations, in Avenay-Val-d'Or. Its 7 hectares of Premier Cru, planted with 90% pinot noir and 10% chardonnay, are worked with a plough, with the help of draught horses. Its champagnes are served in starred restaurants and sold in Europe, Korea, Japan, Taiwan and India.
With its Prestiges range, the house seeks to express the pure essence of each grape variety, letting time have the final word. Here, it is pinot noir, the grape variety of its slopes, that it sums up in one phrase: "the strength of years".
The perfect pairing
Aperitif
The house recommends it with aged cheeses such as Comté: its notes of dried fruits and honey echo the texture of the cheese.
Starter
The house pairs it with morels, on a creamy poultry dish: its ripe notes meet the taste of the forest floor.
Main course
Another pairing from the house: its power stands up to duck, and its noble bitterness echoes that of the orange.
