TASTING NOTES
An intense, brilliant gold, with fine, continuous bubbles. The nose, fresh and precise, blends white flowers and citrus fruits, then opens onto brioche and toasted dried fruits. On the palate, the floral notes and a well-balanced acidity meet the brioche born of long ageing, leading to a long, lingering finish. Serve at around 10°C.
The composition

Terroirs
A Blanc de Blancs from old vines: 100% chardonnay from vines around 45 years old, grown on the chalky soils of the Premier Cru of Avenay-Val-d'Or, in a vineyard where it accounts for only 10%. Hand-harvested, vinified plot by plot in enamelled steel tanks, with light cold filtration. Bottled in 2019, the wine spent 50 months on lees in the cellar, then received a dosage of 6 g/L. Production of 3,200 numbered bottles. 12.5% vol.
About this house
A family estate founded in 1963 by Gaston Révolte, the house has worked the same land and aged its wines in the same cellars for three generations, in Avenay-Val-d'Or. Its 7 hectares of Premier Cru, planted with 90% pinot noir and 10% chardonnay, are worked with a plough, with the help of draught horses. Its champagnes are served in starred restaurants and sold in Europe, Korea, Japan, Taiwan and India.
With its Prestiges range, the house seeks to express the pure essence of each grape variety, letting time have the final word. Here, chardonnay, rare on this pinot noir estate, takes on what it calls "the elegance of the years".
The perfect pairing
Aperitif
The house recommends it with sashimi: its finesse and citrus notes respect the raw flesh of the fish.
Starter
The house's pairing: the toasted dried fruit notes echo the grilling, and the acidity responds to the iodine.
Main course
The dish the house pairs it with: the wine's brioche notes marry the beurre blanc, and its length accompanies the flesh of the turbot.
