TASTING NOTES
A bright, golden robe, animated by fine, persistent bubbles. The nose blends white fruits — pear, yellow apple, fresh peach — with white flowers, then gives way to brioche and hazelnut. The attack is full and precise, with a lovely freshness; the palate, creamy, unfolds candied citrus and toasted almond over a persistent minerality. The finish, long, becomes delicately saline. Serve at around 10-12°C; in jeroboam, this 2009 can still be kept for ten to fifteen years.
The composition

Terroirs
The William Deutz cuvée bears the name of the house's founder. The 2009 vintage blends approximately 65% pinot noir, 30% chardonnay and 5% meunier, sourced from premier and grand crus: the pinot noir comes from the Montagne de Reims, notably Bouzy and Verzenay, the chardonnay from Avize, at the heart of the Côte des Blancs. The wine aged for more than eight years on lees in the cellars of Aÿ. The jeroboam — three litres, the equivalent of four bottles — further slows exchanges with the air and allows the wine to evolve with great slowness. 12% vol.
About this house
Founded in Aÿ in 1838 by William Deutz and Pierre-Hubert Geldermann, the Deutz house has cultivated a style of elegance and precision for nearly two centuries. Today part of the Deutz group, it maintains a tight range, built on the great terroirs of the Montagne de Reims and the Côte des Blancs, and the patience of its chalk cellars.
The William Deutz cuvée is the house's prestige millésimé, a tribute to its founder, built around pinot noir. The 2009 received 94/100 from Wine Advocate and Gault&Millau, 96/100 from James Suckling. In jeroboam, it becomes the bottle for large gatherings: enough to serve a dozen guests.
The perfect pairing
Aperitif
The freshness of the Avize chardonnay and the saline finish pair with vinegared rice and raw fish; the jeroboam makes it the aperitif for a large gathering.
Starter
Peach, brioche and the fullness of pinot noir: the character of the William Deutz stands up to the flesh of lobster, which its salinity extends.
Main course
The hazelnut and brioche from eight years on lees respond to the woodland notes of morels; the wine's freshness lightens the creaminess of the risotto.
