In the glass, the 2015 Vintage displays a deep golden colour with amber highlights, enlivened by a string of fine, persistent bubbles. The nose opens with toasty notes and cocoa before giving way to white flowers — lime blossom, jasmine, peony —, aniseed and cardamom, with a hint of orange and green papaya. On the palate, contrasts take centre stage: the lemony crispness of the Chardonnay cuts through the silky opulence of the Pinot Noir, revealing notes of iced apple, pink grapefruit, cannelé and chopped almond. The finish, smoky and very long, rounds off the tasting with a rare elegance.

Terroirs

The 2015 vintage draws its Chardonnay from the grands crus of the Côte des Blancs and its Pinot Noir from those of the Montagne de Reims. A hot, largely sunny summer concentrated the body and aromas: the ripeness is exceptional, without sacrificing the crisp freshness that is the hallmark of the house.

About this house

Dom Pérignon is Moët & Chandon’s prestige cuvée. It is named after the Benedictine monk from Hautvillers Abbey who is credited with pioneering work on Champagne blending. Launched in 1936, it is produced exclusively as a vintage cuvée: the house does not declare a vintage unless the result meets its criteria for harmony between tension and opulence.

Under the guidance of Vincent Chaperon, cellar master since 2019, each vintage is approached as a reinterpretation of the same ideal. The 2015 Vintage spent over eight years maturing on the lees before being disgorged: it is this long ageing that gives it its toasty and pastry-like notes, and the texture that is its hallmark. The bottle is sold here on its own, without its presentation box.
